Within our wild plantations , the best specimens are chosen , which are allowed to reach their reproduction phase , which is when the quiote blooms and as a result of this flowering the seeds appear , which are scattered on the ground when pollinated . by the bats of the area, in this way we obtain wild plants of excellent quality.

Ripe plants are selected by measuring brix degrees, in this way we make sure to use only the best pineapples for our process.

The pineapples are sewn in conical stone ovens volcanic for more than 96 hrs. At a constant temperature to extract from the agave its best notes, both sweet and lightly smoked, enhancing the sugars.

Once our pineapples are cooked, they are torn apart and placed in wooden vats where fermentation begins naturally, a process that takes up to 5 days to later be distilled, first the alcohols are destroyed and later they are rectified, thus obtaining our precious Mezcal.

In a Purépecha ceremony on November 1 of each year during the celebration of the Day of the Dead, Mezcal is offered to Lake Pátzcuaro so that it rests in the depths the arms of Hapunda “El Lago” waking him up from his sleep the following year with the arrival of the butterflies to transform into Mezca Lágrimas de Yunuén.
